Every year for thanksgiving I crave my grandmothers chestnut stuffing. Each of her six daughters makes it a bit differently I believe one even adds oysters, but my grandmothers is the original and I like hers best.
Pennsylvania Dutch Chestnut Stuffing
1 1/4 lb fresh chestnuts
1/2 cup chopped celery
1/2 cup melted butter
4 cups bread crumbs
2 well beaten eggs
3 tsp seasoning
1 tsp salt
Wash chestnuts, make two slits on each shell, and bake for 15 minutes at 475 degrees. Shell, boil in water and cover for 20 minutes. Chop fine. Mix with the melted butter, bread, crumbs, salt, poultry seasoning, egg and celery. Toss and stuff. Yum.
I haven't had my grandmothers stuffing for three years and I'm salivating.
